INGREDIENTS

  • 1 Smoked No Salmon
  • 150 g pearl couscous
  • 1 tsp red bell pepper powder
  • 1 eggplant
  • 1/2 red onion
  • 5 tomatoes
  • 1 tbsp pomegranate
  • Handful of fresh parsley
  • Pinch of salt and pepper
  • Splash of olive oil

PREPARATION

  1. Preheat the oven to 190 degrees celsius.
  2. Cut the eggplant in half. Hollow out the insides and put it in an oven dish. Pour olive oil over the insides and sprinkle some pepper over it.
  3. Put the hollowed-out eggplant in the oven for about 30 minutes.
  4. Finely chop the red onion, tomatoes and fresh parsley.
  5. Cook the pearl couscous according to the package directions within 10 minutes.
  6. Mix the couscous with the paprika powder and some salt and pepper. Add the onion onion, tomatoes, fresh parsley and pomegranate. Mix everything well.
  7. Stuff the eggplant from the oven with the pearl couscous and top with the Smoked No Salmon and fresh parsley.
