INGREDIENTS

  • 6 Coconut Shrimp
  • 1/3 romaine lettuce
  • 1/3 red cabbage
  • 50 g julienne carrot
  • 80 g edamame beans
  • 30 g peanuts
  • 3 strings of spring onions
  • Handful of fresh cilantro
  • 1 tbsp grated coconut
  • 1 tsp sesame oil
  • 1 tbsp soy sauce
  • 1/2 lime
  • 1 tsp chili flakes.

PREPARATION

  1. Cut the romaine lettuce and red cabbage into small pieces. Chop the red onion and fresh cilantro finely.
  2. Heat a cooking pan with olive oil and bake the shrimp until golden brown for 3 to 5 minutes.
  3. Crush the peanuts finely.
  4. Put all the greens in a bowl and mix with the sesame oil, soy sauce, juice of 1/2 lime and the grated coconut.
  5. Top of with the coconut shrimp, peanuts, grated coconut and fresh cilantro.
