INGREDIENTS

  • 16 Plain Shrimpz Vegan Zeastar
  • 1 yellow bell pepper
  • 1 red onion
  • 10 tomatoes
  • 5 tbsp olive oil
  • 2 cloves of garlic
  • Handful of fresh parsley
  • Salt and pepper, to taste
  • 1 lemon
  • 1/3 red pepper
  • 1 tbsp red bell pepper powder
  • 1 tbsp curry powder
  • 3 tbsp vegan yoghurt
  • 2 tbsp vegan mayo
  • 3 cm of cucumber

PREPARATION

  1. Cut the bell pepper, red onion, and tomatoes into larger pieces.
  2. For the marinade, mix 3 tbsp olive oil, 1 grated clove of garlic, a handful of fresh parsley, grated red pepper, salt, pepper, and juice of 1/2 lemon.
  3. For the sauce, mix the yoghurt, mayo, 2 tbsp olive oil, grated cucumber, salt, pepper, and a handful of fresh parsley.
  4. Assemble the skewers with the vegetables and Plain Shrimpz.
  5. Heat a grill pan with some olive oil. Add the skewers to the pan and sprinkle with red bell pepper powder, curry powder, and the marinade. Cook until golden brown, or grill on the BBQ if preferred.
  6. Plate the dish by spreading the sauce on the plate and placing the skewers on top. Finish with a squeeze of lemon juice and a sprinkle of fresh parsley.
