INGREDIENTS

  • 12 Plain Shrimpz
  • 1 tbsp soy sauce
  • 4 rice papers
  • Handful of fresh spinach
  • 1/2 avocado
  • 1/2 red bell pepper
  • 1/2 mango
  • Handful of grated carrots
  • Handful of fresh cilantro
  • 3 tbsp pickled red onion (optional)
  • 2 limes
  • Salt and pepper
  • 1 tbsp olive oil

Serve with: soy sauce and satay sauce

PREPARATION

  1. Heat a cooking pan the olive oil and cook the Plain Shrimpz with the salt, pepper, and soy sauce until golden brown, for 5 to 10 minutes.
  2. Cut the red bell pepper, mango, and avocado into small long pieces. Also, finely chop the cilantro.
  3. Soak the rice paper sheets, one by one, in water until soft.
  4. Assemble the spring rolls by adding the Plain Shrimpz, grated carrots, fresh cilantro, mango, avocado, pickled red onion, and spinach.
  5. Roll the rice paper rolls tightly and garnish with black sesame seeds.
  6. Serve with soy sauce and satay sauce.
