INGREDIENTS

  • 2 Champ Tartare
  • 150g potatoes
  • 150g green beans
  • 1 tsp nutmeg
  • 4 cloves of garlic, minced
  • 150ml water
  • 3 tbsp vegan mayo
  • Salt and pepper, to taste
  • 1 tbsp red bell pepper powder
  • Handful of fresh parsley
  • Olive oil

PREPARATION METHOD

  1. Trim the ends off the green beans and finely chop the fresh parsley.
  2. Heat a pan with olive oil over medium heat. Add the Champ Tartare and half of the minced garlic. Season with salt and pepper. Cook on both sides until golden brown, about 3-4 minutes per side. Remove the Champ Tartare from the pan and set aside.
  3. In the same pan, add the remaining garlic and sauté until fragrant. Add the water, vegan mayo, salt, pepper, and red bell pepper powder. Mix well and cook until the sauce is smooth and slightly thickened. Remove the garlic cloves before serving.
  4. Heat another pan with olive oil over medium heat. Add the green beans, nutmeg, salt, and pepper. Cook until the beans are tender and slightly crispy, about 5-7 minutes.
  5. Heat a separate pan with olive oil over medium-high heat. Add the diced potatoes, salt, pepper, and red bell pepper powder. Cook until the potatoes are golden brown and crispy, about 10-12 minutes.
  6. On each plate, arrange the baked potatoes, green beans, and Champ Tartare. Drizzle the sauce over the Champ Tartare and vegetables. Garnish with the chopped fresh parsley.
