INGREDIENTS

  • 1 bag of Crispy Lemon Shrimpz
  • 1 bok choy
  • 10 chestnut mushrooms
  • 1 onion
  • 2 garlic cloves
  • 1 cm ginger
  • 2 tbsp of soy sauce
  • 1 tbsp of rice vinegar
  • Handful of fresh cilantro
  • 1 tsp curry powder
  • 1 tsp bell pepper powder
  • ½ tsp cumin powder
  • 1 tsp sriracha sauce
  • Pinch of salt and pepper
  • 200 ml coconut milk
  • 90 g rice noodles
  • 1 tsp chili flakes
  • ½ lime
  • Olive oil

PREPERATION METHOD

  1. Cut the bok choy in half and cut the mushrooms into 4 equal pieces.
  2. Also cut the onion and ginger into small pieces.
  3. Mix the onion, garlic, ginger, soy sauce, rice vinegar, fresh cilantro, curry powder, red bell pepper powder, cumin powder and sriracha sauce into a kitchen blender into a fine spice mix.
  4. Preheat a cooking pan with some olive oil and bake the Crispy Lemon Shrimpz on both sides golden brown.
  5. Preheat another cooking pan with some olive oil and bake the bok choy and mushrooms with a pinch of salt and pepper.
  6. Preheat a wok pan with some olive oil and bake the spice mix shortly and add the coconut milk. Make sure all the spices are nicely absorbed in the milk.
  7. In the mean time cook the rice noodles according to the packaging (within 5 to 10 minutes).
  8. Prepare your plate with the curry, noodles, bok choy, mushrooms and Crispy Lemon Shrimpz. Top off with some freshly cut cilantro, chili flakes and pieces of lime.
