INGREDIENTS

  • 8 medium potatoes
  • 5 leaves of endive
  • 1 red onion
  • ½ cauliflower
  • Handful of cashew nuts
  • 2 Vegan Zaestar tasty cods
  • 50 g of vegan butter
  • 3 tbsp of vegan mayonnaise
  • ½ tbsp of musterd
  • Handfull of fresh dill
  • Sniff curry powder
  • Sniff pepper and salt
  • ½ lemon
  • 2 cloves of garlic
  • 2 tbsp olive oil

Directions

  1. Peel the potatoes and cut them into smaller pieces.
  2. Heat a pan with water and let it cook.
  3. In the meantime cut the red onion into fine pieces and the endive and cauliflower into bigger pieces.
  4. Cook the potatoes for about 20 minutes and drain afterwards.
  5. Heat a cooking pan with some olive oil and bake the red onion shortly. Add the cauliflower, some salt, pepper, grated garlic and curry powder. Bake the cauliflower golden-brown.
  6. Roast the cashew nuts in a cooking pan until their golden-brown.
  7. After this add some olive oil to a cooking pan and bake the tasty cods according to the package.
  8. Mash the potatoes with the butter, salt and pepper and mix the endive through these mashed potatoes.
  9. Mix the mayonnaise, musterd, juice of ½ lemon, pepper, salt, 1 tbsp of olive oil and fresh dill into a thick sauce.
  10. Prepare a plate with the endive stew, the baked cauliflower and top this of with the roasted cashew nuts. Add the tasty codd with sauce and top of with some fresh dill and pepper.
